SIDE DISH: Spicy Roasted Cauliflower

Cauliflower is all the rage these days, from pizza crust to rice dishes to mashed potatoes. This recipe is less about cauliflower as an alternative to something else, and more about enjoying it for what it is... cauliflower! 

ROASTED CAULIFLOWER
1 head of cauliflower, cut into florets
¼ cup olive oil
1 TBSP Harissa
1 tsp sea salt

SPICY YOGURT SAUCE
2 cups plain yogurt
2-3 garlic cloves
2 TBSP extra virgin olive oil
2 TBSP Harissa

Preheat the oven to 400F.

Coat the cauliflower with Harissa, olive oil, and salt. Mix well and roast until golden and tender, about 35-40 minutes.

Put 2-3 cups plain yogurt into a mixing bowl. Smash 2 garlic cloves with salt (ideally, with a mortar & pestle), and add to the bowl of yogurt. Mix well.

When cauliflower is ready, remove from oven and pour the garlic yogurt  over the cauliflower.

The final and most important step is the spicy oil drizzle!

Place 3 TBSP olive oil into a small saucepan, add 1 TBSP Harissa and heat the mixture about 1-2 mins (low heat) until a spicy fragrance comes from the pan.

Finally, drizzle with the warm, spiced olive oil. Serve immediately.

Don't forget a piece of fresh baguette for soaking up the delicious yogurt sauce!
